These restaurant-style fries are healthier than deep fat fried and you’re in charge of the flavor! Use our recipe and adjust the seasonings to your liking with a dash or more of your favorite herbs and spices.
Irish Food Nerd Alert (I’m Irish it’s OK): One of the main causes of the Great Famine in Ireland between 1845 and 1852 was a potato disease known as potato blight. A shortage of potatoes led to the death of more than 1 million people who were dependent on them as a food source.Â

Maillard Reaction: High Heat! A concurrent chemical reaction in which heat transforms proteins and sugars on and in food. Creating new aromas, colors, and flavors. It makes a grilled steak taste charred, pan-fried chicken taste crunchy and moist, and pan-roasted almonds taste toasty. Temperatures must be high! Fast heating causes moisture to evaporate and browning occurs. Rapid heating via grills, hot pans, ovens, griddles, blowtorches (after sous viding) and deep fryers all create deep layered flavors in food.
What Types of Spices Can I Use on Oven Roasted Potatoes?

Tips for Making the Best Crispy Baked Oven Fries
- Scrub the potatoes clean they’re fresh from the field and need a good stiff bristle vegetable brush to clean them up perfectly.
- Line the sheet pan with parchment paper so the wedges don’t stick, plus it makes for a super quick clean up.
- Be sure to roast the potatoes in a single layer spaced evenly apart, all facing in one direction.
- Flip halfway through baking to ensure that you get the crispiest skin possible.
Chef’s Tip: Soak wedges in ice water for 30 minutes (and up to overnight in the fridge) to remove excess starch , it helps spuds get an even crispier skin! Drain and pat them super dry with a clean kitchen towel.Â
Steps to Flawlessly Cooked Oven Baked Fries
Scrub the potatoes until clean, then blot off with a kitchen towel. Next slice each potato in half lengthwise, depending on the size cut each half into 2-4 wedges. You’ll end up with 6-8 wedges from each potato. Blot the spuds dry again after being cut into wedges. Toss them into a large mixing bowl and pour a large glug of EVOO over the top along with all of the seasonings (see recipe below).

Toss the wedges well by hand or mix with a wooden spoon until coated evenly….

Spread the potato wedges in an even layer on the parchment lined sheet pan, cut side down in the same direction (so when you flip half way through cooking you’ll know which have been turned).

Bake the potatoes for 25 minutes in the preheated oven, then remove and flip the potatoes over to the other side. return to the oven and cook 20 minutes more or until golden and cooked through thoroughly.

Remove from the oven and let the fries cool for 5 minutes, taste for seasoning, adjust accordingly then serve alongside your favorite meal.Â

How to Make Crispy Oven Baked Fries
Crispy Oven Baked Fries are the perfect side to nearly any dish, get creative and make your own flavor combinations with our base!
- 4 large Idaho Potatoes , scrubbed + cut into wedges
- 2-3 Tablespoons extra virgin olive oil (EVOO), same as 2 large glugs
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 Tablespoons fresh Rosemary, chopped
- generous amount of Kosher sea salt + freshly ground black pepper, to taste

Preheat the oven to 450°F/230°C and then line a baking sheet with parchment paper and set aside.

Add the blotted potato wedges into a large glass bowl, pour in the EVOO, then add smoked paprika, garlic powder, onion powder, fresh chopped Rosemary, and S+P to taste....

Toss the wedges well by hand or mix with a wooden spoon until coated evenly....

- Prep time is approximate, be sure that your knife is freshly sharpened (a dull knife is a dangerous knife).
- Cooking time can vary depending on the size of the potato wedges, keep a watchful eye and if you sense or smell that the wedges are cooking faster then pull them out and test.Â
- Best served just after baking, but leftovers can be stored in the fridge and reheated in a 450°F/230°C oven for approximately 10-15 minutes (turn halfway through reheating).
