Preheat the oven to 450°F/230°C and then line a baking sheet with parchment paper and set aside.
Add the blotted potato wedges into a large glass bowl, pour in the EVOO, then add smoked paprika, garlic powder, onion powder, fresh chopped Rosemary, and S+P to taste....
Toss the wedges well by hand or mix with a wooden spoon until coated evenly....
Spread the potato wedges in an even layer on the parchment lined baking sheet, cut side down in the same direction (so when you flip half way through cooking you'll know which have been turned).
Bake the potatoes for 25 minutes in the preheated oven, then remove and flip the potatoes over to the other side. return to the oven and cook 20 minutes more or until golden and cooked through thoroughly.
Remove from the oven and let the fries cool for 5 minutes, taste for seasoning, adjust accordingly. Serve with desired dish.
