Our old fashioned Caramel Apple Pie, baked with the perfect combination of apples and a rich caramel sauce. An award-winning combination that has been in our family for years.

The sauce is so easy to make and simmers while you prep the pie for baking. Once you’re done slicing the apples, they get tossed with sugar and apple pie spice (we have a quick recipe for that too)!

We use our favorite versatile Easy Shortcrust Pastry, it’s buttery, flaky goodness stands up the weight of this mile high pie. Plus, this crust comes together in a snap in your food processor.

If you’re on the fly you can easily use a couple of store-bought refrigerated crusts, you’ll find them in the freezer section.

Which Apple Varieties Are Ideal for Making Apple Pie?

While the USA boasts over 100 varieties of apples, approximately 15 popular types make up nearly 90% of the production. Among these, 8 varieties stand out as ideal choices for crafting delicious Apple Pie.

  1. Granny Smith: Granny Smith apples are known for their firm texture and tart flavor, which holds up well during baking and adds a refreshing tartness to balance the sweetness of the pie filling.
  2. Honeycrisp: Honeycrisp apples offer a perfect balance of sweetness and tartness, maintaining their shape and texture when baked to create a juicy and flavorful pie filling.
  3. Jonagold: Jonagold apples boast a sweet and tangy flavor profile, holding their shape well when baked, making them ideal for apple pies with a soft and tender filling.
  4. Braeburn: Braeburn apples have a sweet and slightly spicy flavor that adds depth to the pie filling, while retaining their texture and juiciness when baked.
  5. Fuji: Fuji apples provide a sweet and crisp texture that offers a pleasant contrast to the tender pie filling, holding up well during baking to create a rich and flavorful pie.
  6. Golden Delicious: Golden Delicious apples offer a sweet and mellow flavor with a hint of tartness, becoming tender and soft when baked, resulting in a smooth and creamy pie filling.
  7. Cortland: Cortland apples are sweet with a hint of tartness, perfect for balancing the flavors in apple pie, and they do not brown quickly when sliced, making them ideal for decorative pie crust designs.
  8. Bramley: Bramley apples have a tart flavor that adds a tangy kick to the pie filling, and they break down easily when baked, resulting in a soft and velvety texture that melts in your mouth.

Mastering the Art of Lattice: A Step-by-Step Guide to Creating a Stunning Pie Pattern

This design is wonderfully straightforward yet creates an exquisite presentation. If you lack a pastry wheel, opt for a pizza wheel to cut the top crust of the pie. Alternatively, a sharp knife paired with a straight edge ruler works just as well. Slice the pastry into uniform strips, ranging from 1/2-inch to 3/4-inch wide, depending on your desired lattice thickness.

Once your pie is filled, arrange 4-7 parallel strips of pastry dough, adjusting based on the thickness of the strips, over the filling. Ensure there’s approximately 1/2-inch to 3/4-inch spacing between each strip.

Then fold back every other strip.

Place a strip of dough perpendicular to the parallel strips as shown. Unfold the folded strips over the perpendicular strip.

Then take the parallel strips that are running underneath the perpendicular strip and fold them back over the perpendicular strip, as shown below. Lay down a second perpendicular strip of dough next to the first strip, with some space between the strips. Unfold the folded parallel strips over the second strip.

Keep going you’re almost there! Proceed with this process until the lattice is complete.

Trim the edges of the strips so they are flush with the pastry of the pie dish. Then crimp and secure them to the shell.

Ingredients

Caramel Sauce

  • 1/2 cup (115 grams) butter
  • 3 Tablespoons all-purpose flour
  • 1/4 cup (60 ml) water
  • 1/2 cup (90 grams) dark brown sugar
  • 1/2 cup (100 grams) white sugar

Apple Pie

  • 2 9 inch Pie Crusts, homemade or store bought
  • 4 Granny Smith Apples
  • 4 Golden Delicious Apples
  • 2 teaspoons apple pie spice
  • 1/4 cup (45 grams) brown sugar
  • 1/4 cup (50 grams) white sugar

Instructions

Caramel Sauce

  • Preheat oven to 425°F/220°C. In a heavy-bottomed saucepan over medium-high heat melt the butter and then stir in the flour with a flat bottomed wooden spoon until blended and smooth (30 seconds). Then add the water, brown sugar, and white sugar stir and bring to a gentle boil. reduce the heat to low and allow the caramel sauce to simmer.

Apple Pie

  • Peel, core and slice apples, toss with apple pie spice, brown sugar, and white sugar.

  • Place the bottom crust into a 9-inch pie pan, then fill with the apples.

  • Slowly pour 3/4 of the caramel sauce over the apples.

  • Cover with a lattice work crust.
  • Use the remaining 1/4 caramel sauce and brush over the top of the pie. 
  • Bake 15 minutes in the preheated oven. Reduce the temperature to 350°F/175°C and continue to bake for another 35-45 minutes, until apples become tender.

Notes

  • Prep time is approximate. 
  • Store apple pie covered up to 2 days at room temperature (due to the fact it does not contain eggs).  It can also be stored in the refrigerator for up to 1 week.
  • To freeze:  Wrap already baked pie in a metal or ceramic pie dish, wrap tightly with double layers of plastic wrap and then heavy duty aluminum foil. Defrost on the counter for 2 hours or in the refrigerator overnight and then rewarm in a preheated 350°F/175°C for 15-20 minutes before serving.
